Monster Hunter Stories 3 has a lot of subquests for you to experience. Many of them are fairly rudimentary, hunting down specific monsters, finding materials, and so on.
However, many of them have pretty great rewards, including crafting recipes and unique amor ets, making them well worth completing. Your companion Side Stories especially give them unique rewards, so it’s best to dedicate time to them all.
